Mussels and Linguine with Garlic Butter & White Wine Pasta Sauce

Pasta is such a good idea for dinner, whether it's for date night, a night in, or a family night. Pasta is a treat that rarely disappoints, and this yummy dish is packed with loads of flavor, a bit of wine for binding, and much creaminess to top it off. Follow these instructions and whip it up, by making it your own any day of the week.


The Basics for Creamy Wine Sauce Are Simple

Be sure to have all of the right ingredients- white wine, whipping cream, and Parmesan cheese. Without whipping cream and Parmesan cheese, the sauce is too thin and doesn’t have the same flavor or consistency. You won’t get the right consistency with either light cream or half and half, so be sure to use heavy whipping cream. The rest of the ingredients with herbs, wine, and spices bring it all home together.


Mussels and Linguine with Garlic Butter & White Wine Pasta Sauce

 

Ingredients:

  • 2 pounds mussels, scrubbed and debearded

  • 1 pound linguine or spaghetti

  • 3/4 cup white wine (we like to add a bit of sherry too)

  • 3 tablespoons butter

  • 1 shallot, finely chopped

  • 1/4 cup fresh parsley, finely chopped

  • 3-4 tablespoons olive oil

  • 2 garlic cloves, minced

  • 2 teaspoons crushed red pepper flakes

  • Freshly ground black pepper

  • 3/4 cup heavy whipping cream

  • 1/2 cup grated parmesan cheese



Directions:

  1. Rinse the mussels and remove beards if necessary

  2. Bring a large pot of water to a boil, add a pinch of salt, and cook the linguine until al dente.

  3. Meanwhile, heat butter and oil in a large saucepan on medium-high heat. Cook garlic and shallots until fragrant, for about 1 minute. Add white wine, and red pepper flakes to the pan. Cover and simmer mussels in the white wine sauce until fully cooked and shells open up, for about 5 minutes. Stir mussels to coat in the sauce.

  4. When the linguine is finished, strain and stir into the mussels and white wine sauce. Now add cream and Parmesan cheese. Simmer for 5-7 minutes, covered, stirring occasionally until the sauce slightly thickens. Serve topped with a pinch of fresh parsley or basil for taste, feel free to add more Parmesan cheese to your liking. Enjoy!
